Bug/Issue "forgot" the past three days

Hello everyone,
I played Stardew Valley for around a week now, and I encountered a very frustrating bug.
Today (28/3) I played the game and when I finished I saved it as usually and quit it (the timeline stood on the summer of the second year). When I re-entered the game later it's suddenly went back to the winter of the first year.

The weird thing is that I played and saved the game more then a few times in between it's current state and the state the game returned to, and it worked until now.

Another thing is the save folder shows it was updated when I exited the game today, but the files themself show they were updated at the 25/3.

Does someone knows what could I do to restore the lost saves? I lost inexplicably and suddenly around 18 hours worth of progress, and it's really frustrating.
