imagine some form of a enemy that latches on to you and stays attached and you have to remove it somehow to escape. a example of this could be a giant snake that tries to constrict your player and you have to escape in a certain amount of time or get eaten and respawn!
lol. when i selected "Grappling Enemies" I pictured a post about using a grappling hook to attach/pull a monster to you. This is a good idea too.
