Not entirely sure of the mechanics in place for this, as it could be intentional.

I traveled to a planet and quickly found myself at the core. Some ore was deposited right at the edge where the lava/rock meets.
When i had the idea to make my base in the center of the core, i tried to mine the ore out to create a pathway into the core.
(Here is the bug) When i placed cobblestone around the lava to protect the ore, it created more ore, essentially 1 gold quickly turned into a node of 5 gold. What i noticed is that it only happens by chance, and not every time i placed a stone around ore, would the stone become ore.

Seems like each lava tile is guaranteed to have a mineral. It has the same chance as any other deep tile. So you found a vein but most of the vein was in lava. You can easily mine in the lava by just covering it all in dirt to reveal great metal finds.
